WHITE CHOCOLATE MOUSSE

Maybe its sacrilegious, but I prefer white chocolate.  I just had to
share...

 

5 ounces White Chocolate 1 1/2 Tablespoons Butter
3 Eggs, separated 2 Tablespoons Sugar
1/2 cup Cream
     

Serves 6

Place the butter and chocolate in a metal bowl.

Place the bowl over steaming water until the chocolate and butter are melted.

Add the egg yolks and cook over the steaming water for two to three minutes, stirring constantly.

Whip the egg whites with the sugar until firm peaks form.

Add the whites to the chocolate mix, a little at a time.

Whip the cream until firm peaks form.

Fold into the mix. Place in 6 individual bowls and refrigerate.
