1/2 Teaspoon yellow mustard | 1 heaping Teaspoon minced garlic | |
1 egg (coddled for 1 minute in boiling water) | 2 heaping Tablespoons parmesan cheese | |
2 Tablespoons lemon juice | 3/4 cup oil (part olive) | |
1 dab of anchovy paste (optional) | salt and pepper to taste | |
Blend these ingredients together
until consistency is smooth. This dressing is delish, I mix it with
bits of crunchy, fresh romaine lettuce and halved cherry tomatos. If
you wish, also add strips of baked or grilled chicken breast or salmon.
